Thick and,flat rice noodles chicken stir fried

This chicken stir fried noodles is simple and yummy. It is rice noodles so it's gluten free!! In Thai it's called "kuay teaw kua kai".

Ingredients;

1. Thick flat rice noodles:  it is available In asian food stores like T and T, Chong Lee in Vancouver and Super 88 in Boston. It's already cooked.  Cut into bite size and separate them from the thick layer. 2 cups for 2 servings.

2. Lettuce:   4-5 leaves; cut into bite size pieces

3. Soy sauce: 3 tbs

4. Oyster sauce: 2 tbs

5. Garlic: 2 cloves

6. Pickled radish: chop finely 2 tbs

7. Eggs:  2

8. Sugar: 1 tsp

9. Ground peppers: 1 tsp

10. Vegetables oil to cook with: 3-4

11. Chicken;  1 breast: cut into bite size pieces.

How to;

1. Heat up the oil in a pan. Then add the chopped garlic and pickled radish.

2. Cook the chicken, then crack 2 eggs in the pan scramble till cooked.

3. Add noodles and vegetables.

4. Mix in the sauce, stir fry until cooked.

5. Serve with a piece of lime or a dash of vinegar.
