thai steam chicken and not so thai olive salad

Hi there!

Tonight I was inspired  to make a Thai steamed chicken: a dish that my mom cooked for us back home. It's very healthy and yummy!

Thai steamed chicken:

ingredients:

  • chicken : half of a chicken or breast part or thighs (best with bones)
  • lemongrass :2 stalks: cut into slices
  • shallots: 2 bulbs: chop into small cubes
  • garlic: 4-5 cloves
  • galangal (thai ginger): 1 tbs: cut into small slices
  • a pinch of salt
  • lime leaves : 4-5 leaves
  • fish sauce: 1 tbs
  • soy sauce: 2 tbs
  • oyster sauce: 1 tbs
  • sugar: 1 tbs
cilantro: optional

how to:

1. Chop chicken into bite size pieces.

2.  Grind up ingredients #2-5 in a mortar & pestle or food processor until mixed well together.

3. put the ground up ingredients in to already cut up chicken bowl.

4. tear lime leaves into smaller pieces, also to bring more natural oil and aroma.

5. put the rest of all the ingredients into a bowl  then mix them well.

6. put in a baking tray and cover with tin foil and bake it at 375 degree F for 45 minutes.

7. then you will smell something really yummy and before serving put chopped cilantro on top if you have it.

serve it with steamed rice, steamed vegetables and olive salad



Olive Salad

Ingredients:

  • green olives: half a cup
  • olive oil: 1 tbs
  • cherry tomatoes: half a cup
  • pickle garlic
  • cilantro
  • ground pepper: 1 tsp
How to: easy! mix everything together and put chopped cilantro on top.

My mom always told me to eat something sour or vinaigrette to help me digest. I made this salad to go with Thai steamed chicken. It goes really well together.





 Food is yummy!!
